If you are coming to the UK it will be a general Tier 2 visa which you can apply for once you get the contract and sponsorship letter. Good luck!

If you are coming to Italy, you will apply for 'Assegno di Ricerca' through Nulla Osta process. Your university should apply for it at the Preffeturra and then send a copy to you that you can use for embessay. Remember to apply only this kind of visa otherwise if you apply other kinds, your salary will be much less than as you have to pay unnecessary taxes. There is lot of problems for international students in Italy regarding correct salaries, and in the past we have to struggle alot to get it right through NCP so apply right visa at the first step. Its kind of work visa only for research.
